Flammekueche ia an Alsatian dish of bread dough rolled out thinly in the shape of a rectangle or circle and covered with crème fraîche or fromage blanc, thinly sliced onions and lardons (bacon). Cream cheese can be used in place of fromage blanc. One could describe it as a French style pizza. Traditionally it is cooked in a wood burning oven, just like pizza but nowadays you can cook it in your regular oven. It makes a nice change from the usual Italian style pizza and is absolutely delicious.

La tarte flambée, ou flammekeuche, est un plat traditionnel alsacien, composé d’une fine abaisse de pâte à pain recouverte de crème épaisse et de fromage blanc et garnie de lardons, d’oignons crus en rondelles puis rapidement cuite au four très chaud.


Serves 4


1 pizza dough base
150 g / 5 oz lardons (bacon)
3 medium onions
100 g / 3 ½ oz fromage blanc (or crème de maroilles)
200ml / ¾ cup thick crème fraîche
salt & pepper


Preheat your oven to 240 C / 475 F
Roll out your pizza dough as thinly as possible and place on a pizza stone or cookie sheet
Thinly slice the onions
In a bowl, mix the crème fraîche and the fromage blanc
Add salt and pepperSpread the mixture on your dough
Place the onions and lardons on the base
Cook for about 10 minutes
It should be golden but not brown
Serve immediately and eat with your fingers, just like the Alsatians
