This must be one of the quickest and easiest cakes around. And it has minimal washing up too as it is all mixed together, at once, in one bowl. The taste is amazing as the combination of pistachios marries very well with the apple topping. I served it with a salted caramel sauce that I had made a few days earlier and it was a perfect topping. So, what is keeping you from starting to make this cake? Get started now and before you know it, you will have a delicious tea time treat or dessert.
Serves 8
Ingredients:
170 g / 6 oz flour
1 1/2 teaspoons baking powder
220 g / 1 cup castor sugar
125 g / 9 tablespoons butter
1 teaspoon vanilla extract
2 eggs
100 g / 4 oz raw pistachios, chopped
1/2 teaspoon salt
1/2 cup whole milk
1 to 2 peeled and thinly sliced apples
Preparation:
Preheat the oven to 180 C / 360 F
Grease a 25 cm / springform pan
Add all the above ingredients to the bowl of a mixer and beat until well blended
Pour the mixture into the cake pan
Smooth the top
Place the thin slices of apples on the top
Bake for 40 minutes
Allow to cool
Pour warm honey or salted caramel sauce on the top before serving with rich vanilla ice cream

My husband (who loves me making him cake) is away til Thursday and I have been researching likely contenders for the welcome home cake. He will love this … just healthy enough to get away with pretending it’s not really cake and oozing with our favourites – is there any more beautiful food colour than greenest pistach? and things that are easily available here in apple county – it’s a winner and as ever I wil report back on my efforts!

What a delicious looking cake Nadia! I love the pale green colour from the pistachios (pistachios and apples is a new combination to me, and one that I will have to try!). The fact that it comes together so quickly makes it the best sort of cake 🙂
