These are the perfect bite sized treat when you are in the mood for something chocolatey but not too big. Great for little hands as well, children love them.

Makes 18 mini cupcakes


250 g / 9 oz dark chocolate
100 ml / 1/3 cup cream
100 g / 7 tablespoons soft butter
3 eggs
150 g / 3/4 cup sugar
130 g / 1 cup flour
1 teaspoon baking powder
50 g / 2 oz walnuts, roughly chopped
18 chocolate bonbons, such as Maltesers


Preheat the oven to 180 C / 360 F
Firstly, make the ganache
Chop up 100 g / 3 oz of the dark chocolate
Warm the cream slightly and pour it over the chopped up chocolate
Wait 1 minute then whisk, starting from the center
Mix well, allow to cool and place in the refrigerator for at least 3 hours
Melt the rest of the chocolate in a bain-marie or over a pan of boiling water
Add the butter
Mix well with a rubber spatula to obtain a smooth and shiny texture
In a large bowl, beat the eggs with the sugar
Add the chocolate slowly so as not to “cook” the eggs
Pour in the flour and baking powder
Add the nuts and mix well
Pour the mixture into your cupcake or mini muffin pans
Bake for about 20 minutes
Allow to cool
Remove the ganache from the refrigerator and whisk it with an electric beater
Decorate the cupcakes with the ganache, using either a spatula or a piping bag
Serve decorated with a Maltesers chocolate or similar
