Baked eggs with cream and salt cured ham

This must be one of the easiest and most delicious ways to serve eggs for breakfast. You can obviously use different types of ham but using prosciutto, Jamon Iberico, Serrano or Bayonne ham is best for this recipe.

I used Jambon de Bayonne, a salty boneless French ham, named after the southwestern France port city of Bayonne. This ham is still produced according to regulations founded on ancient practices and is still preserved exclusively with inland “mountain salt” found at the base of the Pyrenees mountains. The ham is aged for about 9 to 12 months.

According to a legend in the south of France, the Count of Foix was out hunting wild boar in the 14th century and wounded a boar. The animal escaped. Months later its carcass was found in the hot, salty spring water in the town of Salies-de-Béarn. The meat was apparently preserved and still edible! This discovery of the preservative qualities of salting pork led to a ham production industry in the area that still thrives today.

Serves 2

Ingredients:

2 tablespoons butter
4 eggs
4 slices ham
¼ cup cream
Freshly ground black pepper
Chopped fresh parsley

Method:

Preheat your oven to 160°C / 325°F
Generously butter 2 large ramekins and place on a baking sheet
Place 2 slices of ham in the base of each dish
Crack 2 eggs in each dish
Divide the cream and pour into each dish
Add some black pepper and salt if desired (but remember the ham is already salty)
Bake until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks)
Sprinkle on some parsley and serve with a crusty baguette

Baked pasta with sausage, sage and butternut

This dish is pure comfort food at its very best. It combines all of my favorite comfort foods, pasta, bechamel sauce, sausages and cheese and is cooked like a gratin thereby giving a delicious crusty, cheesy topping. What more could you want? It is inspired from a northern Italian recipe. In the original version, large pasta shells or conchiglioni are used and the sausage stuffing in placed in the shells but if you cannot get hold of them, feel free to use any large pasta such as penne, cavatappi, fusilli, rigatoni or even rotini.

Serves 4 to 6

Ingredients:

1 small butternut squash, peeled, seeds discarded, chopped into small cubes
2 teaspoons olive oil
10 sage leaves, chopped
6 pork sausages (I used Toulouse sausages)
1 teaspoon nutmeg
350g / 12oz pasta
50g / 2oz butter
50g / 2oz plain flour
850ml / 1 ½ pints milk
50g / 2oz parmesan, grated
100g / 4oz grated cheese (emmental, mozzarella mix)

Preparation:

Preheat the oven to 200 C / 400 F
Place the butternut in a saucepan with a little water and cook for about 10 minutes until soft
Heat the oil in a frying pan
Add the sage leaves and sizzle for about 1 minute
Remove the sausages from their skins and divide into small balls about the size of a marble or hazelnut
Add the sausage balls to the pan and fry until golden brown
Add half the butternut to the sausage mixture and set aside
Mash the remaining butternut with the nutmeg and any liquid in the pan
Cook the pasta according to package instructions
Melt the butter in a saucepan
Add the flour and stir, cook for 1 to 2 minutes
Gradually add the milk, stirring constantly
Cook for 2 to 3 minutes over medium low heat until you have a smooth, thick sauce
Add the mashed butternut, parmesan and seasoning
Spread the sauce and butternut mixture on the bottom of a large, shallow baking dish
Drain the pasta
Place the pasta on top of the sauce
Pour the sausage and sage mixture over the pasta
Scatter the grated cheeses over all
Bake for 30 minutes or until golden brown

Stuffed courgette

These stuffed courgettes are typical fare in France and especially in the South of France. There are numerous recipes for these famous stuffed vegetables, but this is one of my favourites. As we enter summer here in the northern hemisphere, we are starting to see all the typical summer vegetables start to arrive at the local weekly markets and courgettes are one of the most abundant and my favourites. I have used round courgettes here but you can use large beefsteak tomatoes, onions and aubergines too, it’s sometimes nice to stuff an assortment of vegetables this way, so your guests have a choice of which vegetable they prefer.

I made the stuffing in advance, assembled it all and popped it in the oven for 45 minutes once my lunch guests had arrived.

I used veal mince but you can use beef, pork sausage or ground chicken or even if you are vegetarian, omit the meat and add some cooked rice or quinoa in its place.

Serve these delicious stuffed vegetables with a green salad and a crusty baguette to mop up the juices and a glass of wine. voila – perfect, simple summer lunch.

Serves 4

Ingredients:

4 round courgettes
1 tablespoon olive oil
400g / 15oz ground veal
1 medium onion, finely chopped
1/2 red or yellow pepper, chopped
2 tomatoes, peeled, seeded and chopped
1 clove garlic, crushed
1 teaspoon cumin
1 teaspoon herbs de Provence
Salt and freshly ground black pepper

Preparation:

Preheat the oven to 180C / 360F
Cut the tops off the courgettes, keeping them to use as lids and using a pointed spoon, hollow out the centres of the courgettes and keep the flesh
Place the courgettes in a baking dish and set aside
Heat some oil over medium heat in a sauté pan
Add the onions and peppers and cook until soft and translucent
Add the garlic, courgette flesh, tomatoes and meat and allow to simmer for 10 minutes
Add salt, pepper, cumin and herbs
Spoon the mixture into the courgettes and place the tops back on top of the courgettes Drizzle a little olive oil over and around the stuffed vegetables and bake for 45 minutes, or until well browned and the vegetables are soft, but still holding their shape
Serve hot or at room temperature
